CRANBERRY RELISH SALAD

1 c. boiling water
1 (3 oz.) pkg. lemon-flavored
gelatin
1 (10 oz.) pkg. frozen
cranberry-orange relish
lettuce

Pour boiling water onto gelatin in bowl; stir until
gelatin is dissolved. Stir in frozen relish until thawed.
Pour into 4 cup mold or 4 to 6 individual molds. Chill until
firm. Place 2 servings on lettuce; if desired, top with
mayonnaise. Serve remaining gelatin topped with whipped cream
as dessert the next day. Makes 2 servings and 2 or more for
another day.
Note: Pineapple-flavored gelatin can be substituted for
the lemon-flavored gelatin. Add for variety, add one of the
following:
1 (8 1/4 oz.) can crushed
pineapple with syrup
1 apple, chopped
1/3 c. chopped nuts
