PARTY CHICKEN SALAD

Makes 6 servings at 77 cents each.

1/4 c. vegetable oil
1/4 c. orange marmalade
3 Tbsp. cider vinegar
3 Tbsp. mayonnaise
2 tsp. curry powder
1/4 tsp. salt
2 drops liquid red-pepper
seasoning
6 c. cubed cooked chicken (two
3 lb. chickens)
lettuce leaves
2 Tbsp. golden raisins
2 Tbsp. sliced almonds,
toasted
2 Tbsp. chopped parsley
Combine oil, marmalade, vinegar, mayonnaise, curry
powder, salt and red-pepper seasoning in 2 cup glass measure;
stir until smooth. Cover with plastic wrap and refrigerate
until ready to use.
To Serve: Arrange chicken over lettuce on platter.
Drizzle with dressing; toss. Sprinkle with raisins, almonds
and parsley. Garnish with orange slices, if you wish.
