2 c. sliced, peeled fresh
1/4 c. sugar
1 tsp. lemon juice
1 (3 oz.) pkg. cream cheese,
1/2 tsp. ground ginger
1 to 2 Tbsp. milk
3 c. torn mixed salad greens
1 c. chilled fresh raspberries
1/2 c. chilled fresh

Place peach slices in bowl; toss with sugar and lemon
juice. Cover and refrigerate about 1 hour. Drain peaches,
reserving syrup. Cover peach slices and refrigerate. To
prepare dressing, add cream cheese and ginger to reserved
syrup; beat until smooth. Stir in milk until dressing is
desired consistency. Chill. Place salad greens in salad bowl.
Arrange peach slices, raspberries and blueberries atop greens.
Serve with dressing. Serves 6.
