EASY GREEN-ONION POTATO SOUP 1 c. sliced green onions with tops 1 medium clove garlic, crushed (optional) 1 Tbsp. oil 4 c. chicken broth 1 c. milk or half and half 4 serving size instant mashed potatoes (dry) 1 medium carrot, shredded coarse fresh ground pepper minced parsley (optional) In medium saucepan over medium heat, saute onions and garlic in oil, stirring occasionally, 5 minutes or until onions are wilted. Add broth; bring to rolling boil. Remove from heat; stir in potatoes and carrots. Cook until thoroughly heated. Season with pepper; sprinkle with parsley. Makes 4 servings. Per serving: 179 calories, 7 grams protein, 25 grams carbohydrates, 6 grams fat, 23 milligrams cholesterol and 783 milligrams sodium.
