SPAGHETTI SAUCE

6 lb. ground beef
3 c. chopped onions
2 c. green peppers
4 c. celery
8 c. cooked canned tomatoes
5 to 6 cans (6 oz.) tomato
paste or puree
4 Tbsp. brown sugar
3 Tbsp. minced parsley
3 small garlic cloves
3 Tbsp. salt
1 tsp. pepper
1 tsp. ginger
1 tsp. allspice
2 Tbsp. vinegar

Brown meat. Add onions, green peppers, celery and
garlic; cook until tender. Put all in large kettle. Add rest
of ingredients. Let simmer 15 to 20 minutes. Put in jars and
process in hot water bath for 1 hour for pints and 1 1/4 hours
for quarts. For chili, add 1 can beans to 1 quart sauce. Also
may use in lasagna and for pizza sauce. Makes 8 quarts.
