2 tsp. unflavored gelatin
1/2 c. sugar
1/4 tsp. salt
2/3 c. milk
1/2 tsp. vanilla
2/3 c. flaked coconut
1 c. whipped cream
10 oz. pkg. raspberries or
In a medium saucepan, combine gelatin, sugar, salt and
milk. Let stand 5 minutes to soften gelatin. Stir over medium
heat until gelatin and sugar are dissolved. Chill until
partially set. Stir in vanilla. Fold in coconut, then whipped
cream. Spoon mixture into 6 1/2 cup molds. Chill until firm.
Unmold into small dessert dishes. Spoon fruit and juice over
top of mold and serve.
