ONION SOUP

10 onions
6 potatoes
2 stalks celery
2 Tbsp. margarine
salt and pepper to taste
croutons (10 to 20)
1/4 c. grated Swiss cheese
water to cover onions and
potatoes

Cut up onions in slices. Put onions and potatoes
together in cold water. (Peel and cut potatoes first). Save 5
slices of onions out. In same saucepan, put the celery (cut
up), 1 tablespoon margarine and the salt and pepper to taste.
Cook this 45 minutes. Stir 5 slices of onion in 1 tablespoon
margarine until gold. Add to top of soup. Cook altogether 10
minutes. Add croutons and grated Swiss cheese. Serve hot and
immediately.
