GAZPACHO (Cold Tomato Vegetable Soup)
3 c. tomato juice
3/4 c. finely chopped celery
3/4 c. finely chopped cucumber
1/2 c. finely chopped onion
1/4 c. finely chopped green
1 Tbsp. dry minced parsley
3 Tbsp wine vinegar
2 Tbsp. olive oil
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. Worcestershire sauce
dash of garlic powder
Combine all ingredients in glass or stainless steel
bowl. Cover and chill several hours. Serve topped with
croutons, if desired. Serves 6 to 8 people. Very refreshing
