(With Lemon Pine Nut Dressing)
4 bunches fresh spinach
1/2 lb. sliced fresh mushrooms
3/4 c. pine nuts
1/2 tsp. tarragon leaves
1/4 tsp. grated lemon peel
1/8 tsp. nutmeg
1/2 c. salad oil
1 1/2 tsp. sugar
1/4 c. lemon juice
1/2 tsp. salt
1/2 tsp. garlic salt

Put all ingredients except pine nuts, spinach and
mushrooms into blender. Blend at medium speed until creamy or
shake ingredients vigorously in a bottle. Pour over spinach,
mushrooms and pine nuts. Toss lightly. Serves 12.
