HEALTH SALAD 1/2 head white cabbage, shredded 2 carrots, grated 1 large green pepper, diced 1 medium onion, diced 1 small cucumber, diced 2 stalks celery, diced 6 Tbsp. olive oil 3 Tbsp. wine vinegar 1 large ripe tomato, diced 1 1/2 Tbsp. minced basil or 1/2 tsp. dried basil 1 Tbsp. sugar salt and pepper to taste Mix all vegetables together in a bowl. Combine remain- ing ingredients. Add to vegetables and mix well. Refrigerate at least one hour and up to 24 hours before serving to allow flavors to develop. Toss before serving.
