PASTA SALAD WITH CHICKEN AND ARTICHOKES

16 oz. box spiral pasta
3 chicken breasts boned and
shredded
2 (6 oz.) jars marinated
artichoke hearts
1 avocado, diced
3 oz. jar capers, drained
5 oz. jar green olives, sliced
2 tomatoes, diced
4 green onions, chopped

Fresh Basil Dressing:
1 c. fresh basil
2/3 c. olive oil
juice of 1 lemon
1/4 c. red wine vinegar
1 clove garlic, crushed
1 Tbsp. Dijon mustard
1/2 tsp. cayenne pepper

Cook noodles according to package directions. Rinse in
cold water and drain. Place noodles in a large salad bowl.
Add shredded chicken, artichokes (with marinade), avocado,
capers, green olives, tomatoes and green onions. Toss with
dressing and chill.
Fresh Basil Dressing: Mix all ingredients in food
processor with steel blade or use blender. This is GREAT!
