CHINESE CHICKEN SALAD
2 c. light chicken meat,
cooked and shredded
1 head lettuce, shredded
thinly with sharp knife
4 or 5 shredded green onions
3 Tbsp. toasted sesame seed
1/4 c. toasted slivered
1 c. (or more) Chinese Sai Fun
noodles (also known as bean
1/2 c. sesame oil
1/4 c. vinegar (pear
2 Tbsp. sugar or more
1 tsp. salt or more
pepper, several twists
Pull apart bean threads as best you can and deep fry a
small amount at a time. Upon immersion, they turn white almost
immediately. Remove at once.
Dressing: Be sure dressing tastes salty, yet definitely
sweet. Mix all ingredients, pour dressing over all, adding
