SPINACH PESTO SAUCE
(Very Easy, Very Gourmet Tasting)
3/4 c. olive oil
1 (10 oz.) pkg. frozen chopped
spinach, thawed
3/4 c. grated Parmesan cheese
2 Tbsp. crushed basil
1 tsp. salt
1 tsp. garlic powder
1/4 tsp. pepper
1 c. walnuts

With metal blade, process or blend oil, spinach, cheese,
water, basil, salt, garlic and pepper until smooth. Add nuts
and process until coarsely chopped. Transfer to small saucepan
and simmer until hot. Toss with 1 pound pasta. Makes 4 entree
portions or side dish for 6 to 8.
