REALLY GOOD ONION SOUP

1 beef bouillon cube
1 c. boiling water
1 Tbsp. butter
1 small onion
2 tsp. flour
1 tsp. butter or olive oil
1 slice bread or French bread
or 1/4 c. croutons
1 clove garlic
2 Tbsp. grated Swiss cheese

Dissolve bouillon cube in boiling water to make broth.
Melt 1 tablespoon butter in small skillet. Saute thinly sliced
onion in butter over medium heat until transparent. Stir in
flour, then broth and boil 1 minute. Meanwhile heat 1 teaspoon
butter or olive oil in another skillet. Fry bread on both
sides in this skillet. Then rub 1 1/2 pint baking dish with cut
side of clove of garlic. Place toasted bread in bottom, pour
soup over and top with grated cheese. Broil until cheese
melts, about 1 minute.
