6 ripe medium tomatoes
1 Vidalia onion, sliced
2 1/2 Tbsp. olive oil
1 Tbsp. lemon juice
1 clove garlic, chopped
2 Tbsp. each chopped fresh
tarragon, basil and parsley
1/4 tsp. pepper
1 tsp. salt

Place the tomatoes in a pan of boiling water for 2
minutes; drain. Rinse with cold water; peel and thinly slice.
Place in a bowl with onion. In a small bowl mix remaining
ingredients. Pour over the tomatoes; let stand at room temper-
ature for 15 minutes.
