ICEBERG WEDGE WITH RUSSIAN DRESSING

1 large egg yolk
1 Tbsp. cider vinegar
1/4 tsp. dry mustard
1/2 tsp. salt
3/4 c. light olive or
vegetable oil
2 Tbsp. ketchup
1/4 c. finely chopped sweet
pickles
2 Tbsp. finely chopped onion
1 Tbsp. finely chopped red
pepper or pimiento
1 head iceberg lettuce

In small bowl or container of blender, beat egg yolk,
vinegar, mustard and salt until frothy and well blended. Add
1/4 cup of oil, 1 teaspoon at a time to egg mixture, beating
constantly. Add remaining oil. Add remaining ingredients and
pour over lettuce.
