4 c. spinach leaves, well
1 c. each quartered mushrooms
and julienne cut red bell
2 Tbsp. red wine vinegar
1 tsp. Dijon style mustard
1/8 tsp. salt
1 1/2 tsp. sugar
2 Tbsp. water
2 tsp. olive oil
1/8 tsp. pepper

In bowl combine spinach with mushrooms and red pepper
strips. In small bowl combine vinegar with water, sugar and
mustard. Add oil, salt, pepper and mix well. Pour dressing
over salad and toss to coat.
