GREEN BEAN SALAD 1 lb. green beans, washed and trimmed 3 Tbsp. salad oil 2 tsp. vinegar 1/8 tsp. pepper 3/4 tsp. salt 1/2 tsp. prepared mustard 1 small tomato, chopped 1 onion, chopped 2 Tbsp. chopped pickles 2 Tbsp. parsley 2 tsp. bottled capers (optional) 1 hard-boiled egg, chopped Cut green beans in half crosswise. Cook until crisp and tender, drain and cool. Combine salad oil, vinegar, pepper, salt and mustard. Then add tomato, onion, pickles, parsley, capers and egg. Toss beans with dressing, refrigerate. Delicious with cold meat or chicken. Serves 4.
