BEAN SOUP Bean Mixture: 10 kinds beans, 1/8 c. each 2 c. ham, diced 1 medium onion, finely chopped 1 1/2 c. celery, finely chopped 1/4 lb. bacon 3 c. potatoes, diced 1 c. tomatoes, crushed Wash beans, place in large kettle. Cover with water. Add 2 tablespoons salt and 2 teaspoons soda, soak overnight. Drain and add 2 quarts water, ham and bring to a boil. Then simmer slowly 2 1/2 to 3 hours. Saute bacon, onions and celery and add to mixture. Add potatoes and tomatoes. Simmer another 30 minutes. Salt and pepper to taste. Makes 4 quarts or 16 (1 cup) servings. In crock-pot simmer on low for 12 to 24 hours.
