SHRIMP SALAD

3 c. cooked rice
3/4 c. chopped celery
3/4 c. chopped green onions
2 large tomatoes
1 can shrimp
1 c. mayonnaise

Note: One cup of raw rice equals 3 cups of cooked.
(Rinse in cold water.)
Add celery and green onions to cooked rice. Mix well.
Add large tomatoes (peeled and diced) and shrimp (drained, but
not rinsed). Add about 1 cup mayonnaise (not salad dressing).
Add enough to get the right consistency. Salt and pepper to
taste. Store in the refrigerator overnight for the best taste.
