DIJON VINAIGRETTE SALAD DRESSING

3/4 c. vinegar (red wine
vinegar is nice for
Italian-style)
1 1/2 Tbsp. Dijon mustard
1 Tbsp. salt
1/2 tsp. pepper
1/2 tsp. sugar
1 tsp. Italian herbs

Any or all of the following optional ingredients make
for an extra nice dressing.
1 Tbsp. fresh chopped parsley
1/4 c. grated onion
1 clove chopped garlic
1/4 c. fresh lemon juice
Shake the ingredients in a tight glass jar or cruet;
then add 3 cups salad oil (olive oil is the best, though not
necessary). Shake together.
It is best after it has sat a few hours.
