15 KINDS OF BEAN SOUP

1 1/2 c. mixed dry beans
2 qt. water
1 tsp. salt
1 ham hock
1 large onion, chopped
1 large clove garlic, chopped
1 can tomatoes
juice of 1 lemon

Soak beans overnight. Add water, salt and ham hock.
Cook slowly 3 hours. Add onion, garlic, tomatoes and lemon
juice. Simmer 2 hours more. If using a crock-pot, cook 8
hours on low or 4 on high.
