CREAM OF BEAN SOUP|
1 1/2 c. dried beans
1/2 c. onion, chopped
2 Tbsp. butter
1 c. powdered milk
4 c. water
salt to taste
Pick over and wash beans. Soak them overnight in
1 1/2-quart cold water. Add salt; cover and simmer beans until
almost tender. Add additional boiling water if necessary. Add
chopped onions and cook until beans are tender. Mash bean, if
desired. Add milk and butter to beans. Heat and serve.
