CHEESY BROCCOLI SOUP

1/2 c. finely chopped celery
3 Tbsp. minced onion
1/4 c. butter or margarine
1/4 c. flour
1 1/2 c. milk
1 (13 3/4 oz.) can chicken
broth
1 (10 oz.) pkg. frozen chopped
broccoli, thawed
1/4 tsp. salt
1/4 tsp. pepper
dash of cayenne
1/2 c. grated Cheddar cheese

Saute celery and onion in butter until tender-crisp.
Stir in flour until smooth. Add milk and broth in gradual
amounts, stirring after each addition until smooth. Heat and
stir until thickened slightly. Add broccoli and seasonings.
Heat, stirring frequently, for 10 minutes, do not boil. Stir
in cheese until melted. Makes about 4 cups.
