SPINACH-GRAPEFRUIT SALAD 1 lb. fresh spinach 3 grapefruit Dressing: 1/2 c. salad oil 2 Tbsp. vinegar 2 Tbsp. lemon juice 1 tsp. sugar 1 tsp. salt 1 tsp. dry mustard 1 tsp. paprika dash of cayenne pepper Wash spinach thoroughly, stripping out and discarding stems. Tear large leaves in half. Section grapefruit, remov- ing membranes. Halve each segment. Drain both well and chill. Prepare dressing in blender and chill. Just before serving, mix grapefruit and spinach, tossing with dressing.
