TOMATO-CUCUMBER-ONION SALAD

2 medium cucumbers
2 large tomatoes
1 large sweet onion
1 tsp. dill weed (or 2 Tbsp.
fresh dill)
2 Tbsp. oil (or less)
1 1/2 Tbsp. vinegar or lemon
juice
1 1/2 tsp. sugar
dash of white pepper

Peel or partially peel cucumbers and cut into 1/8-inch
thick slices. Slice tomatoes. Cut onion into very thin
slices. Layer cucumber, onion and tomato slices in a shallow
serving dish. Repeat layers. Combine dill, oil, vinegar,
sugar and pepper. Heat slightly to melt sugar. Cool and pour
over vegetables. Chill. Best if prepared ahead. Serves 6 to
8.
