VINAIGRETTE SALAD DRESSING|
1 Tbsp. chopped shallots
1 clove garlic, mashed
1 tsp. Worcestershire sauce
1 tsp. Dijon mustard
3 twists black pepper mill
juice of 1/2 lemon
3 Tbsp. red wine vinegar
6 Tbsp. olive oil
1/2 Tbsp. chopped parsley
1/2 Tbsp. chopped chives
1 Tbsp. finely diced green
1/2 tsp. salt
Combine shallots, garlic, Worcestershire sauce, mustard,
black pepper, lemon juice and vinegar in small mixing bowl.
Mix all ingredients well with a whisk, then add oil, spoonful
by spoonful, stirring constantly. Add parsley, chives, green
pepper and salt. Stir well with whisk. Pour into jar with
tight-fitting lid; shake vigorously. Let stand at least ten
minutes. Serve over salad greens.
