FESTIVE FRUIT SALAD 1 head Boston lettuce 2 oranges 1 grapefruit 5 kiwi 1 16 oz. can peach halves in juice 1 (16 oz.) can sliced pears, in lightly sweetened juice 1/3 c. slivered almonds 3/4 c. vegetable oil 1/4 c. orange juice 2 Tbsp. cider vinegar 1 Tbsp. honey 1/4 tsp. salt 1/8 tsp. pepper Separate lettuce into leaves. Arrange leaves on large serving platter. Using sharp knife, peel oranges and grape- fruit. Pare kiwi and slice. Drain peaches and pears. Slice each peach half into quarters. Arrange fruit on platter. Sprinkle with nuts. In small bowl, whisk oil, orange juice, vinegar, honey, salt and pepper together. Serve with salad. Makes 10 servings.
