MUSHROOM-SPINACH TOSSED SALAD

2 Tbsp. tarragon or wine
vinegar
3/4 tsp. salt
1 small clove garlic, crushed
dash of pepper
8 oz. mushrooms, sliced
16 oz. spinach, torn into
bite-size pieces
1/4 c. vegetable oil

Mix vinegar, salt, garlic and pepper. Toss with mush-
rooms and let stand 15 minutes. Toss spinach and oil until
glistens. Toss mushroom mixture with spinach.
