SHRIMP SALAD NEW ORLEANS|
1 c. cold cooked rice
3/4 lb. cooked cleaned shrimp,
3/4 tsp. salt
1 Tbsp. lemon juice
1/4 c. slivered green pepper
1 Tbsp. minced scallions or
2 Tbsp. French dressing
1 Tbsp. chopped stuffed olives
3/4 c. diced raw cauliflower
speck of pepper
1/3 c. mayonnaise or cooked
Toss together all ingredients but lettuce. Serve on
lettuce. Makes 4 servings.
