SUFFERN INN SALAD

6 Tbsp. mayonnaise
juice of 1 lemon
1 small onion, minced
2 c. frozen peas
1 c. Swiss or Cheddar cheese
cubes
salt and pepper
2 c. lettuce, torn into bite
size pieces
8 slices bacon, fried and
crumbled

Twenty-four hours before serving, combine mayonnaise,
lemon juice, onion, frozen peas and cheese cubes in a bowl.
Stir well, and add salt and pepper to taste. Cover and refrig-
erate for 24 hours. Before serving, add bite-size lettuce
pieces and crumbled bacon and toss well. Serves 6.
