SPAGHETTI SAUCE

1/2 bushel tomatoes
1 (3 lb.) jar Ragu or any
tomato sauce
3 (12 oz.) cans tomato paste
1/2 c. olive oil
2 green peppers
2 cloves garlic
2 onions
2 Tbsp. oregano
2 Tbsp. parsley flakes
2 Tbsp. sweet basil
1 Tbsp. black pepper
1/4 c. salt
2 Tbsp. sugar

In blender chop peppers, onions and garlic in small
amount of water. Drain well. Can be chopped in food proces-
sor. Cook small amount of mixture with each pan of tomatoes.
Cook well then put through a food mill. Mix remaining ingredi-
ents. Cook in large pot for 3 to 4 hours or until desired
thickness. Add the 2 tablespoons of sugar last. Put in jars
and seal hot water bath for 20 minutes.
