CRAB BROCCOLI BISQUE 1 c. sliced leeks 1 c. sliced mushrooms 1 c. fresh or frozen broccoli, cut in pieces 1 clove garlic 1/4 c. butter or margarine 1/4 c. flour 1/4 tsp. thyme 1/8 tsp. pepper and salt 1 small bay leaf 3 c. chicken broth 1 c. light cream 3/4 c. shredded Swiss cheese 1 pkg. crabmeat (6 to 8 oz.) Saute leeks, mushrooms and garlic in butter. Blend in flour, salt, pepper, thyme and bay leaf. Add broth and cream. Stir until thick. Cook for one minute. Add cheese until melted. Add broccoli and crab. Heat through.
