GERMAN POTATO SALAD|
6 medium potatoes (2 1/2 lb.)
12 slices bacon
1 1/2 c. chopped, peeled
1 1/8 c. cider vinegar
1 1/2 Tbsp. sugar
1 1/2 tsp. salt
1/4 tsp. pepper
Pare and cut potatoes in half. Cook 20 to 30 minutes
until tender. Slice into 1/4 to 1/2-inch slices. Cut bacon
into one-inch pieces and fry to desired doneness. Place 6
tablespoons bacon drippings in skillet. Add onions and cook
until tender. Stir in vinegar, salt, and pepper to boiling
point. Add bacon and stir. Pour over potatoes.
