MINTED PEA AND RADISH SALAD

2 c. canned peas, drained
1 c. thinly sliced radishes
3 Tbsp. thinly sliced
scallions
1/2 c. chopped celery
1 tsp. finely chopped fresh
mint
1 Tbsp. mayonnaise
2 Tbsp. sour cream
dash freshly ground pepper

Mix peas, radishes, scallions, celery and mint; chill 1
hour. Just before serving, stir in mayonnaise, sour cream and
pepper. Serve on bed of lettuce with wedges of tomato or
boiled eggs.
Note: Do not add salt to salad because salted radishes
give off liquid and make the dressing watery. Substitute
mayonnaise with sour cream or yogurt.
