ALMOND ORANGE SALAD

1/2 head lettuce, shredded
1 c. chopped celery
2 small green onions plus
tops, sliced thin
1 tsp. minced parsley
1 (11 oz.) can mandarin
oranges, drained
1/4 c. toasted almonds

Dressing:
1/2 tsp. salt
dash of pepper
2 tsp. sugar
2 tsp. tarragon vinegar
1/4 c. salad oil

Chill all ingredients together, except almonds. Mix
dressing one day in advance to blend flavor. When ready to
serve, add dressing and toasted almonds.
