GERMAN POTATO SALAD|
3 to 4 lb. potatoes, boiled in
1/4 lb. bacon, diced and fried
3 Tbsp. flour
1/4 c. sugar
1/2 c. vinegar
1 tsp. salt
1/2 c. water
pepper to taste
Boil potatoes in jackets. Fry bacon until crisp and
dice. Remove bacon bits from skillet and add 3 tablespoons
flour to bacon grease. Stir. Add sugar, vinegar, salt, water
and pepper. Bring to boil in pan; add 1 small diced onion.
Pour mixture over sliced potatoes. Garnish with parsley.
