CHICKEN AND AVOCADO SALAD|
4 c. cooked, diced chicken
1/2 c. sliced black olives
1/2 c. mayonnaise
1 avocado, peeled and sliced
1/4 tsp. pepper
1/2 c. chopped celery
1/2 c. green olives, sliced
2 drops Tabasco sauce
1 Tbsp. lemon juice
6 lettuce leaves
Blend chicken, celery, olives, mayonnaise and Tabasco
sauce. Place avocado on a dish and drizzle with lemon juice,
salt and pepper. Toss avocado lightly with chicken mixture and
spoon onto lettuce leaves. Garnish with thin slice of avocado.
