TURKEY SOUP

1 c. turkey stock
1 c. onions, chopped
1/2 c. celery, chopped
2 c. diced potatoes
3/4 c. butter or margarine
3/4 c. flour
1 qt. milk
3 c. turkey, chopped
1 1/2 tsp. salt
1/2 tsp. pepper

Simmer turkey stock, onions, celery and potatoes uncov-
ered until potatoes are tender (about 20 minutes). While that
simmers in a large saucepan melt butter. Add flour and cook
for 2 minutes, then add milk. Cook until thickened. Add
undrained vegetables to thickened solution and add turkey.
Heat through and season with salt and pepper.
