BLACK BEAN SOUP

2 c. dried black beans
cold water
2 tsp. baking soda, divided
3 medium onions, chopped
3 cloves garlic, minced
4 Tbsp. parsley
1/4 c. butter
1 to 2 c. chopped ham
2 tsp. salt
pepper to taste
2 bay leaves
1 c. white wine
grated cheese for topping
chopped green onions for
topping
sour cream for topping

Place beans in enough water to cover. Add 1 teaspoon
baking soda to beans. Soak 2 hours and rinse. Cover with
water and soak overnight. Rinse beans. Cook in water in large
pot until soft, about 3 to 4 hours. Saute onions, garlic and
parsley in butter. Add all ingredients to pot. Cook over
medium to low heat, stirring occasionally for 3 more hours.
Add water if it gets too thick. Top with grated cheese,
chopped green onions and sour cream. Yield: 10 to 15 serv-
ings.
