ZESTY RICE SALAD 2 c. uncooked regular rice 1 (17 oz.) can green peas, drained 1/2 c. minced onion 1 (4 oz.) can mushrooms, drained 1 1/2 c. chopped celery 3/4 c. mayonnaise 2 tsp. salt 1 tsp. pepper 2 Tbsp. lemon juice 1/4 tsp. rosemary To cooked, chilled rice, add peas, onion, mushrooms and celery. Toss. Combine mayonnaise, salt, pepper, lemon juice and rosemary; add to rice mixture, mixing well. Chill. Can add drained bean sprouts and sliced water chestnuts.
