4 to 5 medium chicken breast
3 (1-inch) blocks fatback
1 pt. small lima beans (more
2 small onions
2 medium or No. 2 cans cream
style corn (frozen or whole
6 fairly large potatoes (more
if soup is too thin)
2 qt. tomatoes (frozen or
canned; may add more if
soup is too thick)
2 Tbsp. butter
season to taste
Put chicken, lima beans and fatback in large pot. Cover
with water. Cook until chicken is done. Take chicken out.
Remove bones and chop. Add chicken to mixture with remaining
ingredients. Simmer 3 to 4 hours, stirring frequently. Care
must be taken not to burn or allow to stick to pot.
