ZUCCHINI ITALIANO 1 lb. Italian sausage (out of casing) 3 medium zucchini 2 Tbsp. oil 1/2 c. chopped onion 1 tsp. salt 1/8 tsp. pepper 1/4 tsp. Italian seasoning 2 c. chopped fresh or canned tomatoes add Italian green beans or other vegetable (optional) Cut Italian sausage into bite size pieces and brown in oil. Cut unpeeled zucchini into bite size pieces. Add zucchi- ni to sausage and saute. Add onion and saute until zucchini and onions are lightly browned. Drain off excess grease. Sprinkle with seasoning and add tomatoes and vegetables. Cover and cook over medium heat until squash is tender and the juice forms a fairly thick liquid. For variety, sprinkle 1/2 cup grated cheese over the zucchini mixture. Makes 4 to 5 servings.
