ZUCCHINI SQUASH CASSEROLE

3 lb. zucchini squash, cubed
1/3 c. salad oil
3 medium onions
1 clove garlic, chopped
1 large can tomatoes
2 tsp. salt
2 tsp. oregano
1/8 tsp. pepper
1 Tbsp. wine vinegar
3 Tbsp. grated Parmesan cheese

Arrange squash in greased casserole. Saute onions and
garlic in the oil. Add tomatoes, seasonings and vinegar; bring
to a boil and simmer one minute. Pour tomato and onion mixture
over squash. Top with cheese and bake in a 400 degrees oven for 1
hour.
