ZUCCHINI STEW

4 links sweet sausage
3 zucchini (medium size)
2 onions (large)
3 cloves garlic
3 green peppers
3 tomatoes, peeled and
quartered
1 lb. fresh mushrooms or 3
cans canned
1 qt. spaghetti sauce
(mushrooms)

Remove casing from sausage; fry until browned. Put all
ingredients in large kettle. Add spaghetti sauce; rinse jar
well. Add sausage. Cook until vegetables are done and sauce
thickens a little. Add grated Parmesan cheese 1/2 hour before
stew is done. Serves 15 to 16 people.
