SHRIMP CREOLE

1 lb. cooked shrimp
1/2 lb. margarine
1 clove garlic, mashed
2 medium onions, chopped
1 c. diced celery hearts and
leaves
1 c. green and red pepper,
chopped
1 bay leaf
1 lb. can tomatoes, mashed
(reserve juice)
1/2 tsp. powdered ginger
1/4 tsp. paprika
salt
pepper
2 Tbsp. grated Cheddar cheese
hot sauce

Melt margarine in large skillet. Saute garlic, medium
onions, green and red pepper and celery. Turn heat down. Add
green onions, tomatoes and remaining ingredients, except
shrimp. Simmer over medium-low heat for 25 to 30 minutes,
stirring occasionally. Add shrimp the last 5 minutes of
cooking time. Add tomato juice during cooking only if mixture
becomes too thick and there is chance of scorching. Remove bay
leaf. Serve with rice and garlic bread.
