HAWAIIAN KABOBS

Marinade:

1/2 c. coy sauce
1/2 c. unsweetened pineapple
juice
1/4 c. vegetable oil
1 Tbsp. brown sugar
1 tsp. garlic powder
2 tsp. ground ginger
1 tsp. dry mustard
1/4 tsp. pepper

Kabobs:
1 1/2 lb. chicken breast
12 medium fresh mushrooms
18 cherry tomatoes
2 green peppers
3 c. cooked rice
fresh pineapple chunks

Marinade: Combine these 8 ingredients in saucepan, boil
then simmer 5 minutes; let cool. Add chicken and let marinate
for 1 hour. Better if left overnight in refrigerator.
Kabobs: Alternate on 7-inch skewers with chicken,
mushrooms, tomatoes, green peppers and pineapple chunks. Grill
over hot coals for 20 minutes basting frequently. Serve over
cooked rice. Serves 6.
