STIR-FRIED CHICKEN BREAST WITH VEGETABLES|
zucchini squash or eggplant
bell pepper, green and red
Cut chicken breast, eggplant or zucchini squash and bell
peppers into bite-size pieces. Slice mushrooms, saute each in
butter, sprinkle with salt and pepper to taste. Remove each
item as cooked to container to retain heat (in oven or reheat
in microwave). Steam heat sprouts in butter with 1/2 teaspoon
soy sauce. Yields 6 servings.
Note: Prepare chicken first, or zucchini or eggplant
