EASY TAMALE PIE|
2 Tbsp. oil
1 onion, chopped
1 lb. ground beef
2 c. canned tomatoes
2 c. corn, drained
1 c. milk
1 c. uncooked yellow corn meal
1 1/2 tsp. chili powder
1/2 c. ripe olives
8 oz. pkg. Monterey Jack
cheese, grated or chunked
In heavy skillet, heat oil and cook onion until soft.
Add beef, cook until lightly browned. Stir in all remaining
ingredients, except olives and cheese. Mix well. Add olives;
cover pie with grated cheese. Cover and cook over low heat for
20 to 25 minutes. Makes 6 to 8 servings.
