STIR-FRY WITH OR WITHOUT CHICKEN 2 Tbsp. Saffola oil 2 Tbsp. Saffola margarine 1/2 c. chopped onion (bite size) 1 large clove garlic, minced 1 whole boneless chicken breast in strips 1 red or green pepper, chopped 1 green or yellow zucchini or summer squash 1 tomato (I like more) 2 Tbsp. rice vinegar 2 Tbsp. soy sauce dill weed basil oregano salt and pepper Heat oil and margarine; add garlic and onion. Do not brown; remove to plate. Add chicken; stir until it gets white and firm. Add vegetables, garlic and onion. Stir-fry a few more minutes on fairly high heat. Season with vinegar, soy sauce and herbs. Cover; simmer a few more minutes. You can add green beans, broccoli or whatever you like in vegetables. Carrots would need to be steamed.
